Italian dictionaries tend to be vague on its origins but emphasize its importance: that a ragù is one of the most famous Italian dishes in the world (“sicuramente uno dei piatti italiani più famosi sia in Italia che nel mondo”), that it is as old as antiquity but didn’t appear in print until the end of the eighteenth century (“nascita alla fine del 1700”).
